I was walking through the produce section of my local Costco the other day when a very exciting new product jumped out at me.
Yep, Costco has answered the call of real food lovers (on Canada’s west coast, anyhow) by offering a product that makes it more convenient to eat well.
Convenience matters more than we think, which I’ve talked about here.
I know it shouldn’t be that big of a deal to get out my food processor and grind up a head of cauliflower, but sometimes it just is.
Have you ever had that experience?
Sometimes the extra little steps in the food prep process – although not necessarily onerous – are enough to derail the whole endeavor and order take out instead! Costco has now solved that problem.
There are many uses for cauliflower rice:
- Straight up replacement for rice, mashed potatoes or risotto
- Thickener for soups and stews
- Base for stir fries or curries
- Topper on salads or omelets
- Cauliflower crust pizza
Cauliflower rice has a similar texture – or mouth feel – as regular rice, but lacks that carbohydrate load to drive excessive spikes in insulin (the fat storage hormone). It’s also a fraction of the calories, and high in dietary fiber, folic acid, vitamin C, and water – giving it an excellent nutrient density profile.

As you can see, you simply can’t go wrong with this rice and potato alternative, especially now that it’s more convenient than ever. Thank you Costco!
